Yellow Birch Syrup
Wow, such a unique flavor experience! This a delicious and highly versatile culinary syrup.
Created from the late-spring tapping of native yellow birch trees, it is tapped and boiled in the same way as maple, but with a distinct flavor that is all its own!. There are hints of caramel, malt, balsamic, along with both tangy and fruity notes that can bring sparkle to any dish.
Use in sauces, marinades, glazes, . or as an accent on fine cheeses, pastries and more. For some, the best and highest use is in mixed drinks ( think old fashioned, a splash in bourbon on the rocks).
Our favorite: a few drops on a scoop of vanilla ice cream, just swirl it in, and wow! A flavor supernova!
The "tangy/molasses" yellow birch syrup is made from the sap collected at The Forest Farm in the hills of Western, MA and by small-holder producer partners in the Northeast Kingdom of Vermont. The "sweet/balsamic syrup" is crafted by our partner Le Ferme Agroforesterie Trois Sommets, in Quebec.
